Maple Walnut Cupcakes Cake

Ingredients


Ingredients:

2 1/2 Cups all purpose flour

1/2 tsp baking powder

8 tbs salted butter room temp

1 3/4 cups of sugar

2 large eggs 

1 Tbs pure vanilla extract 

1 cup of skim milk

1/4 cup heavy cream 

1/2 cup of pure maple syrup

1/2 cup chopped walnuts 

Frosting:

2 sticks of butter 

4 cups of powdered sugar

1Tbs milk

1/2 Tbs of vanilla extract 

1/4 cup of pure maple syrup 

Walnuts to garnish 


Instructions


1. Preheat and Prepare

• Preheat your oven to 350°F (175°C).

• Line cupcake pan 


2. Mix Dry Ingredients

• In a medium bowl, whisk together:

2 ½ cups all-purpose flour

½ teaspoon baking powder

• Set aside.


3. Cream Butter and Sugar

• In a large mixing bowl, use an electric mixer to beat 8 tablespoons (1 stick) of butterwith 1 ¾ cups sugar until light and fluffy (about 2–3 minutes).


4. Add Eggs and Vanilla

• Beat in 2 large eggs, one at a time.

• Add 1 tablespoon pure vanilla extract and mix until combined.


5. Add Liquids and Dry Ingredients

• In a small bowl or measuring cup, combine:

1 cup skim milk

¼ cup heavy cream

½ cup pure maple syrup

• Alternately add the dry ingredients and the milk mixture to the butter mixture in three parts—starting and ending with dry ingredients. Mix on low speed just until smooth (don’t overmix).


6. Fold in Walnuts

• Gently fold in ½ cup chopped walnuts using a spatula.


7. Bake

• Divide the batter evenly in cupcake tins

• Bake  for 15-20 minutes, or until a toothpick inserted in the center comes out clean.

• Let cupcakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.



Maple Frosting


Instructions

1. In a large bowl, beat 2 sticks of butter until creamy (about 2 minutes).

2. Gradually add 4 cups powdered sugar, one cup at a time, mixing on low speed after each addition.

3. Add 1 tablespoon milk½ tablespoon vanilla extract, and ¼ cup pure maple syrup.

4. Beat on medium-high speed for 2–3 minutes until light and fluffy. If too thick, add a touch more milk; if too thin, add more powdered sugar.
