“STRAWBERRY CUPCAKES WITH STRAWBERRY BUTTERCREAM FROSTING”

Ingredients:
1 and 1/4 cups chopped strawberries (half puréed half chopped)
2 and 2/3 cups cake flour
2 teaspoons baking powder
3/4 cup softened salted butter
1 and 1/2 cups granulated sugar
1 large egg + 2 egg whites
1 Tbs pure vanilla extract
1/2 cup full-fat sour cream,
1/2 cup whole milk
2 tsp Strawberry Jello powder mix
STRAWBERRY BUTTERCREAM
2 sticks of butter
4 cups sifted powdered sugar
1 Tbs vanilla
1/2 cup crushed freeze dried Strawberries
2 tsp Jello Strawberry mix
2 Tbs whole milk
Directions
Whisk butter sugar together then slowly add eggs.
Add milk, vanilla, and dry ingredients and mix on low
Add sour cream and jello and puréed strawberries and continue to mix on med low
Fold in rest of chopped strawberries and scoop into cupcake liners.
Bake on 350 for 15-20 minutes.
Pipe generous amount of buttercream on cooled cupcakes
